3 Easy and cozy meals for when life is a little crazy
I need easy meals this week.
Justin is traveling for work three days and two nights.
We have a class meeting at school one evening.
Weston has a sow (momma pig) due farrow (have babies) any day.
The kids don’t have school today.
I have our grass-fed beef to deliver.
And oh yeah! It’s freaking -25 outside.
As I sat down to do my meal planning and figure out how we are going to get everything accomplished, I needed several days of super simple meals!
They need to be cozy meals that warm everyone up.
I also need leftovers to add lunch boxes.
And something the kids enjoy so I don’t have to deal with meal complaints.
Healthy, hearty meals is a must to ward off any illness from too much time inside.
Luckily, I have a freezer full of Weston’s pork and it makes life so simple even when life is a little extra crazy.
Here’s what I’m making:
Cowboy Eggs
Brown 1 lb of ground pork or seasoned sausage.
Crack six eggs into hot pan with browned pork.
Cook eggs and optional top with cheese.
Egg Roll Bowls with Rice
Easiest meal there is that your whole family will love!
It’s so good for you too.
Egg Roll Bowl
Ingredients:
1 lb Seasoned Pork Sausage
1/2 head of cabbage shredded and 3 large carrots shredded or 1 bag of coleslaw mix
Thaw your pork sausage and then brown in a large skillet pan.
Add shredded cabbage & carrots or bag of coleslaw mix.
Cook until veggies are soft.
Optional: Top with sesame seeds, Primal Kitchen No-soy teriyaki sauce or serve with fried rice.
This makes a great meal but also are great leftovers that I can pack in a thermos for the kids school lunch! Just add the rice and then the meat and cabbage on top.
I am going to cook extra rice in my instant pot and to add to the kids thermos for snack/lunch another day. I’ll add a little warm milk, cinnamon and a touch of maple syrup to the rice before packing it up!
